Italian Patties (chicken, turkey or pork)

Ingredients:

  • 500g mince of choice

  • 1 medium brown onion, diced

  • 1 broccoli stalk, grated (optional for extra hidden veg!)

  • 1 carrot, grated

  • 1 small zucchini grated

  • 1 egg (to bind)

  • 1 chilli, deseeded and finely diced

  • 1 tbsp Italian herbs(squeeze tube) OR 1 tsp dried Italian herbs

Method:

  1. Combine all ingredients in a large mixing bowl with your hands until well combined

  2. Roll mixture into 12-15 balls

  3. Cook in batches in a frying pan on a medium heat (press flat with spatula for quicker cooking)

  4. Serve with sweet potato mash + green beans and broccoli florets

Notes:

  • Use different herbs and spices for different flavours (eg: paprika or chives)

  • Can pop in the oven and bake for 20 minutes for a low fuss dinner
