Italian Patties (chicken, turkey or pork)
Ingredients:
500g mince of choice
1 medium brown onion, diced
1 broccoli stalk, grated (optional for extra hidden veg!)
1 carrot, grated
1 small zucchini grated
1 egg (to bind)
1 chilli, deseeded and finely diced
1 tbsp Italian herbs(squeeze tube) OR 1 tsp dried Italian herbs
Method:
Combine all ingredients in a large mixing bowl with your hands until well combined
Roll mixture into 12-15 balls
Cook in batches in a frying pan on a medium heat (press flat with spatula for quicker cooking)
Serve with sweet potato mash + green beans and broccoli florets
Notes:
Use different herbs and spices for different flavours (eg: paprika or chives)
Can pop in the oven and bake for 20 minutes for a low fuss dinner
